Commemorate President’s Day with festive ice cream cupcakes in red, white, and blue. They’re a delectable, patriotic dessert the entire family will love.
- 1 batch white cake batter (prepared from a cake mix box)
- Red food coloring
- Blue food coloring
- 1 qt. vanilla bean ice cream
- Fresh strawberry slices
- Fresh blueberries
Preheat oven and prepare white cake batter as per the instructions on the box. Line two 12-cupcake cupcake pans with foil liners. Next, divide the cake batter into two separate bowls. Stir in blue food coloring to one bowl of batter and red food coloring to the other bowl of batter until you have achieved the shade of red and blue you desire.
Add about two tablespoons of batter into each cupcake liner to create 12 red and 12 blue cupcakes. Bake until the cupcake is cooked through and a toothpick comes out clean when inserted into the center, about 10 to 12 minutes. Allow cupcakes to cool to room temperature and then put them in the freezer for about 25 minutes.
Once the cupcakes are somewhat frozen, fill each cupcake liner all the way to the top with vanilla bean ice cream. Freeze until the cupcakes are firm. Then when the cupcakes are ready to serve, top the red cupcakes with blueberries and the blue cupcakes with strawberries. Makes at least 24 cupcakes.
